*For a bigger meal, I like to serve them with eggs/an egg dish, bacon/sausage, fruit, (and mimosas!) -- on a weekend when it's just the two of us, I usually just do bacon or sausage, & sometimes fruit. And of course some Cold-Brewed Iced Coffee!
**Leftovers will freeze -- just let them cool completely, wrap tightly in plastic wrap, wrap again in aluminum foil, then put inside a large Ziploc bag and freeze. To defrost, I unwrap them completely and put them on a paper towel in the fridge to keep them from getting soggy. (Most likely you won't ever have leftovers -- it's only when I make them for just the two of us that I do -- and I usually halve the recipe when it's just us.)
Ingredients
1/2 c. butter
6 eggs
1 1/2 c. milk
1 1/2 c. flour
1. Heat the oven to 425 degrees. Put the butter in a glass baking pan (9x13 for the full recipe, or a square pan for half the recipe) and put it into the oven to melt.
2. While the butter melts, put eggs, milk, and flour in blender/food processor and whirl for 1 minute.
3. Remove pan from oven and...
pour the batter into the center -- it will spread out to the edges.
Bake 20 to 25 minutes,
until puffy and golden/medium brown.
The corners should puff and curl up like the wooden shoes in Holland....hence, Dutch babies. :)
Don't be surprised if people 'fight over the corners. You could get more corners out of a full batch by baking it in two square pans...or you can just tell everyone to grow up. :)
Top with maple syrup, jam, powdered sugar, lemon juice, honey, Nutella, lemon curd or any combo of these (a favorite of mine is raspberry jam and lemon juice, or boysenberry jam with a little syrup -- it's all delicious -- powdered sugar is great, too!)
And there you have it -- a super-easy, versatile, and delicious breakfast treat fit for a special occasion or simply a lazy weekend morning -- ready in under 30 minutes!
